Default Operating Temperature

I just put in a bigger radiator that can cool my engine in the summer.

355 SBC w/671 blower, street car on pump gas.

I am running a 180 degree thermostat now with no issues.

Is there any benefit to running a 195* thermostat? I could probably run a 165* if I wanted to.

I was thinking the engine would be more efficient hotter if controlled?

I am also interested in the science behind the logic.

Cooler air going into the engine will cool whatever fuel you are using allowing more/(denser) fuel into the same space. The cooler air is already denser. This helps to make more power.

Cooler air into the intake is one thing... cooler water holding block temps down is another... Cold block temps is not better if it is TOO cold... there are many reasons you should have the engine a "proper operating temps"
Too hot = not good.
Too cold = not good.
175 to 210 is acceptable, especially if on alcohol...
