Could anyone give me an idea on what a 1991 Chevy Silverado with a 468 might weigh?

About 3,700 pounds, depending on the material of your heads and intake.

I figured a full size pickup with all interior and stuff would weigh more since I've searched the web and found numerous people saying 4500+

Just looked at the door on a truck like mine but with a SBC and says 5600 gross weight so less the 1000 is 4600 so I figure with BBC and me it would be between 4900-5000

Nope, sorry.
Gross weigh is the weight of the vehicle plus the payload.
So, with your and my numbers 5,600 (gross weight) less 2,400 (payload) plus 150 (BBC-SBC difference) equals curb weight 3,350 pounds. Don't forget to add your weight.
