Default messuring egt

if the exhaust gas is 1200 degrees would the header also be 1200 degrees and would i be able to check the the temp with an inferred thermometer?

If you are able to ride on the fender and point the inferred gun at 100 mph you can, it's not going to go to 1200 degrees except at wide open throttle, it should idle around 500/700 degrees.

The temp on the outside of the tube will be lower btw.
Even with egts inserted in the tubes, the readings often tell more about the tips protrusion into the exhaust flow,
than the actual exhaust temp.
