I played with that idea for a while when I had my 2001 v6 mustang, I would think that there would be a lot of trouble with the computer, and electronics in general on that swap, I do not have a whole lot of knowledge about modular engines so I went and bought a 1995 mustang gt with a 5.0, You still would have the same body style that you are used to but the torque and horsepower definitely are a lot more fun. The 5.0 (302) also has a huge aftermarket for it so it definitely is builder friendly.
A 302 would fit in your year mustang and if you are looking for simplicity carberation would be the way to go, try for a 94-95 block (full roller motor and more trq/hp than 86-93.
