Take the spring off and instal a height micrometer on the valve stem,put the retainer and keeper back on and adjust the mic up until it is against the retainer and read the measurement.
To check the coil bind height you compress the spring all the way and measure the height of it.I am no head guy but I think the best way is in a spring checker. You could put it in a vise I think but I don't know if that is a good idea (someone will let you know on here.) not sure if it will hurt the spring if put in a vise because you don't want to put any burrs or anything on the spring. The spring manufacturer will provide the coil bind height if you know the part number but I believe you should still check it to be sure.
