I'm going to add a 250 shot of nitrous to a sbc. As of the the jetting appears to be correct. When I install the nitrous, do I need to increase the jet size?

Jet the nitrous system for the fuel you need on when the switch is on, if you jet the carb it will be incorrect when not using it.

Mark is correct. Leave your carb jetting alone. Jet your NOS accordingly.
