i have a freshly rebuilt 350 turbo with shiftkit whats the biggest stall i can use on it

Depends on the application, you can any stall that you want for that trans. If it's for the street probably about 3,000.

The type of trans has nothing to do with the rpm limit of the converter.
The converter needs to be suited for the whole combination.
